At Finca La Alacena , we understand that the journey of coffee, from cultivation to cup, is a complex and painstaking process. For this reason, we decided to audit every link in the coffee value chain to ensure the highest quality and consistency in each bean. This comprehensive approach not only ensures a superior product, but has also allowed us to create and position our zatro coffee brand in the demanding specialty coffee market.
Cultivation and Harvesting
It all starts in our highlands of Pueblorrico, where climatic conditions and biodiversity create an ideal environment for coffee cultivation. Here, each plant is fed with fertilizers and specific care so that only the best grains are harvested. Our commitment to sustainable and eco-friendly practices is reflected in the quality of our coffee.
Benefit and Fermentation
Once harvested, the beans undergo a rigorous processing process. We have implemented innovations to reduce water consumption and optimize process efficiency, such as the use of scrubbers and African beds for drying in the shade. Controlled fermentation at different times and conditions allows for the development of unique and distinctive flavor profiles.
Roasting and Packing
The next crucial step is roasting, an art we’ve perfected in our fire association. Here, each batch of coffee is roasted to perfection, highlighting the natural properties of each variety. This control allows us to maintain high standards of quality and consistency, which are essential for our consumers.
